While I’m more of a coffee drinker, these days I welcome a sip of tea. The aroma that wafts from a fresh brew is so soothing. Perhaps its the spices. I prefer warm notes of cinnamon and star anise. Paired with citrusy cardamom and spicy ginger, the spices transform simple black tea into a treat. What’s even better is the creamy addition of milk. Not just any milk either. I like to get mine from Sprouts Farmers Market because they are diligent about sourcing from local dairies. Local to Arizona is Danzeisen Dairy, a family-owned farm that has been operating for more than 50 years. Their milk contains no preservatives or hormones, and the cows are treated with such love. They are seen by veterinarians weekly to ensure their alfalfa-based diet as well as care result in a balanced and healthy life. It’s amazing how different the milk tastes. Fresh, clean and crisp are the only ways I can describe it. Anyways, pouring it into my spiced brew transforms it into a lovely masala chai tea. I like to drink it hot at the moment. I’m sure I’ll be icing it when summer arrives.

Masala Chai Tea

Warm up with masala chai tea, a brew with warm and spicy notes of cinnamon and ginger.
Ingredients
  • 1½ cups water
  • 1 cinnamon stick
  • 4 green cardamom pods, smashed
  • 2 pieces star anise
  • ½-inch piece of fresh ginger, thinly sliced
  • 1 bag of black tea
  • 1½ cups milk
  • honey, to taste
Instructions
  1. In a small pot, add the water and spices. Bring to a boil and reduce to a simmer for up to 5 minutes.
  2. Add the tea bag and milk. Simmer for 2 minutes and then remove from the heat. Allow the tea to steep for another 2 minutes.
  3. Discard the spices and tea bag.
  4. Serve with honey.
